Warning: S’mores Bars

I’d say we’re friends right? Not like best friends forever, but we’re establishing a lovely author/reader relationship.  So as a friend, I feel it is my duty to tell you that there is hardly ever a good reason to make these.  There is rarely an occasion where anyone can justify making an entire 9×13 pan of chocolatey-graham crackery-marshmallowy goodness, but once you taste these you’ll find all kinds of reasons to make them :)  Celebrating 22 weeks of being pregnant? S’mores bars! Looks like it might rain outside? S’mores bars!! Sunday afternoon? S’mores bars!!!

Don’t get me wrong – I love a good rice crispy treat, but these are in a league of their own.  They’re just as easy as rice crispy treats though, and you’ll find that you might have a harder time waiting for them to set so you can cut in to them than actually making them. Take a look:

S’mores Bars

1 box Golden Grahams cereal (or compatible cereal)
10 oz mini marshmallows
1/4 c melted butter
1 c mini chocolate chips

That’s it.  Directions: also nice and simple.  Melt you butter. Pour that over your mini marshmallows in a microwave safe bowl.  Microwave your marshmallows in 30 second increments until totally melted – mine took about 2 minutes.  Stir in your cereal. Stir in some your chocolate chips – some will melt, that’s okay.  Scoop all of that into a buttered 9×13. Then comes the hard part – waiting for everything to set up before you cut into these bad boys.

You can speed this up a little by covering your pan and putting it in the fridge.  Do wait until everything is set up though – otherwise you’ll end up with a pile of gooey snacks on your plate (yes, I know from experience).  Sure, that’s delicious, but why not wait until you can actually eat it with your hands?

In the meantime – there’s bound to be some leftover gooeys on the spoon you used to get all that goodness into your pan.  It would be irresponsible of you to let that go to waste.
